All recipes I find and want to try or meals I already make, all consist of making plenty of food for more then just one person. And then going to the grocery store, despite me buying plenty of normal food in normal quantities, its still pretty obvious that I'm also buying some items made for just one person to eat.
But, I can't change the situation I'm in and so I have to play the cards I've been given.
So, when I do cook, I cook for two…or three, four, and five.

Today, I am thankful for leftovers.
Meal planning has gotten to be a lot easier now because I can account for days when I know there will be a small pile-up of food in fridge that needs to be eaten. Sure, I take some leftovers for lunch to work, but lets be real, sometimes I forget my lunch or I just want to go to the cafeteria like everyone else. Leftovers make long days easy because I don't have to process anything else except putting something in the microwave to re-heat. Leftovers save some money because I'm not having to do something separate for every single meal. Leftovers allows me to enjoy a meal again and maybe again three more times, but thats okay. As much as I don't like a cluttered fridge full of tupperware containers and half empty dishes full of food, I do enjoy living within a budget and with some ease and less stress/headache to meals.
